Preparation Time 10/15 minutes.
Cooking Time 30 minutes approx
Makes approx 300ml
25g/1oz butter
1 medium onion Finely chopped
1 garlic clove crushed
2 tablespoons wine vinegar
150ml water or stock
1 tablespoons prepared English mustard
2 tablespoons Demerara sugar
1 slice lemon
1 bay leaf
pinch cayenne pepper
2 tablespoons Worcester sauce
4 tablespoons tomato puree
Ground salt and pepper to taste

Makes approx 300ml Melt butter in a saucepan and fry union and garlic until soft
Do not allow to brown
Add vinegar, water/stock, mustard, sugar, lemon slice, bay leaf and cayenne pepper.
Bring to the boil and simmer for approx. 15 minutes
Stir in the remaining ingredients and add salt and pepper to taste
Simmer for a further 5/10 minutes

Remove the lemon slice and bay leaf before the sauce is used.
