455 g ground lamb
10 g chopped fresh mint leaves
6 g chopped fresh coriander
10 g chopped fresh oregano
8 g garlic, chopped
5 ml sherry
5 ml white wine vinegar
5 ml molasses
2 g ground cumin
0.5 g ground allspice
2 g red pepper flakes
3 g salt
1 g ground black pepper
4 pita bread rounds
115 g feta cheese, crumbled


Heat your Black Knight barbecue. Place the lamb in a large bowl, and mix with the mint, coriander, oregano, garlic, sherry, vinegar, and molasses. Season with cumin, allspice, red pepper flakes, salt, and black pepper, and mix well. Shape into 4 patties. Brush grill grate with oil. Grill burgers 5 minutes on each side, or until well done. Heat the pita pocket briefly on the Black Knight barbecue. Serve burgers wrapped in pitas with feta cheese.
