15 (3 ounce) lamb loin chops (1-inch thick)
2 cloves garlic, sliced
3 g garlic powder, or to taste
1 g chili powder
25 g white sugar
freshly ground black pepper to taste
15 ml fresh lime juice
15 ml soy sauce
30 ml olive oil
10 g chopped fresh coriander
10 g lime wedges
27 g lemon wedges,br>

Place the lamb chops into a roasting pan, and season evenly with the garlic, garlic powder, chili powder, sugar, salt, and pepper. Drizzle with 1 tablespoon of lime juice, soy sauce and olive oil. Cover and refrigerate overnight.
Heat your Black Knight barbecue till the coals are white. Allow the lamb to stand at room temperature while the barbecue reaches temperature. Roast uncovered on the barbecue to your desired degree of doneness, about 20 minutes for medium, or 30 minutes for well done. Garnish with a sprinkle of coriander and squeeze lemon and lime juice over the top before serving.
